Clear a Chat from the Feed
This is the hide people mean. On the Chat screen, press and hold the name. Open Chat and Notification Settings, then tap Clear from Chat Feed, then confirm. Guides that match the current app also go through the chat header, then Chat Settings, then the same clear.
For a Group, official help is the same idea. Press and hold the Group, tap Chat Settings, then Clear from Chat Feed.
Snapchat also has a Settings path. Open Profile, tap the gear, then App & Privacy, then My Privacy & Data. On iOS, tap Clear Data, then Clear Conversations, then the X next to a name. On Android, tap Clear Conversation. Official help says this does not delete saved or sent content.
The name leaves the list, but you can still find the person through Search. A new Snap or Chat brings the conversation back to your Chat list. Clearing a conversation only tidies your feed; it does not hide or lock the chat.
Mute Chat Alerts
Mute is the weaker hide. Official mute help says you press and hold the name, tap Chat and Notification Settings, then Notification Settings, then Mute Chats and Mute Calls. They can still send. You will not get a lock-screen ping. They are not told.

Delete After Viewing
Open Chat and Notification Settings, tap Delete Chats, then choose After Viewing, 24 Hours After Viewing, 7 Days After Viewing, or Never. This changes how long messages remain in the conversation; it does not hide the thread.

The thread that ranks for this search is someone asking if they can hide certain chats on the list. Snapchat does not offer that folder. The workaround people use is Clear from Chat Feed.
